Dr. Palmer is Professor and Head of the Division of Nutrition and Oral Health Promotion at Tufts University School of Dental Medicine (TUSDM) and also Professor and head of the Master’s Degree component of the Combined Dietetic Internship Master’s (MS/DI) program at Tufts’ Friedman School of Nutrition Science and Policy and the Frances Stern Clinic of Tufts Medical Center. She is also Adjunct Professor of Public Health at Tufts University School of Medicine.
Her primary role for the past 50 years has been to teach Applied Nutrition in Oral Health to dental students, dental hygiene students, nutrition students, and other health professionals. TUSDM has been a pioneer in developing models for implementing nutrition care in clinical dental settings. Since the 1960s the school has had what is now known as an “Interprofessional” clinical dental rotation for dietetic intern students, who come to TUSDM for 3 weeks to work with dental students and their patients to share their expertise with dental students in clinical and academic settings while learning about the many interrelationships between nutrition and oral health.
Dr. Palmer has published extensively in the professional and lay literature, and has lectured and consulted nationally and internationally on nutrition and oral health issues for professional organizations, government, voluntary agencies, private industry, the media, and the public. Her textbook: Palmer C, Boyd L. Diet, Nutrition, and Oral Health, Prentice Hall, 2016 is in its 3rd edition.
